Interesting fact:
When fresh sap is tapped from the trees, maple syrup has a very low sugar content, but the premium stuff sold to us in the shops is around 66 per cent sugar! In Korea, the raw, less sweet stuff is actually favoured. It’s called ‘Gorosoe’ which translates as ‘tree good for the bones’.
